Get In My Belly. Recipes That Didn't Disappoint.

Hey folks!! 

So last time I gushed about all the handmade and personal touches that went into the baby shower that I hosted for my sister-in-law.  I still swoon over the pictures!  This post is dedicated to all the amazing recipes (and their creators) that were created. 

I'm telling you, do yourself a favor and find a reason (any reason) and make some or ALL of these!  You won't be sorry.


With the shower being at 2pm, I knew that I wanted to make some lighter snacky options that were both savory and sweet.  I scoured Pinterest and started pinning away.  The menu was narrowed down to three savory options, fresh fruit and dip and 2 desserts.  Along with the food, guests could choose between iced tea or punch. 

The savory dishes included:


Corn Muffin Thumbprints.  I followed Cristen's recipe to the letter and opted to top these thumbprints with Matt's homemade strawberry jam that he cans every year.  These little gals were delicious!  The honey butter and little bits of corn, woo! 


Fresh Fruit and Orange Creamsicle Dip.  Deliciousness abounds!  I'm a BIG lover of all things creamsicle and this was spot on.  For this recipe I did substitute fresh OJ for concentrate.  

The two other recipes... Blogger Fail.  No pictures.  Alas.  You'll just have to trust me and make them without the pictures.  I'm a trustworthy gal, promise.

This Pickle Wrap Dip tastes JUST LIKE those old school, painstakingly created Pickle Wraps.  My mom is a champion Pickle Wrap maker and finding a shortcut recipe was right up my alley!  I've made this dip several times and always add a splash or two of pickle juice just before stirring.  Extra pickle flavor never hurt nobody!  

At each table setting, I set a small paper cup of this Snack Mix.  I added garlic powder in lieu of the infused olive oil and also added some chili powder.  Initially, I was a little worried this might be more spicy than most of the group could take, but they all ponied up and loved it!

On to the desserts.  Oh, the desserts!


Salted Caramel Chocolate Cake and Mini Apple Tarts, oh my!  They were as delicious as they look.  The cake was epic!  Seriously.  I'm a sucker for the salted caramel phase that's going around and it paired great with vanilla ice cream.  I did end up doubling the chocolate frosting recipe.  Because well, it's frosting!  

The Mini Apple Tarts were a variation of this recipe.  I opted to use store bought pie crust and went with apple filling because I'd canned some last fall... that was delicious!  Is there any interest in having my write up all my adaptations and post this recipe?  Lemme know!

To wash down all these tasty treats, I served good ol' Lipton raspberry ice tea and punch

 
The punch was super-duper good, but I didn't follow the recipe to the letter.  Based on several of the reviews I decided to use raspberry sherbert instead of strawberry ice cream.  And I did float some limes and lemons!  It tasted great and obviously the color was spot on too!

Rustic Chic Baby Shower Decor

Last month I had the honor of hosting my sister-in-laws baby shower!  You may have seen several teaser shots on Instagram because I started planning it months in advance.  #compulsiveoverplanner

The guest list was relatively small and my 'vision' for the shower was going to most easily created if I could start putting things together over the course of a few weeks.  So the decision to host the shower at our house was made relatively quickly!  Thankfully, we have the extra space and we borrowed the tables and chairs from Matt's office.

Jennifer and I spent several hours on the phone talking about what she didn't want for the shower (hot pink, lambs or shower games) and things she did (ice cream, rustic/vintage and not too much of a fuss... Ya, that didn't happen!).  Armed with that knowledge and what I had in my party planning/catering stash, I settled on  subtle feminine touches with lots of burlap, barn wood and pastels.  Rustic Chic, if you will!

The first thing I started obsessing over on was the invitation and book request cards!  Thank goodness for free graphics and PicMonkey.


Once I was satisfied with the invites, all my attention was turned towards decorations!  Using some leftover vintage fabric, I sewed napkins.


I made pink tulle pom poms, burlap pennants and paper fans to hang as the backdrop for the food table.  The straps of fabric I tied in little bows around jute.  The white curtains?  Plastic tablecloths hung with fishing line!  Thank you, Husband!  Matt also cut and built the barnwood 'canvas' that I painted to say "You're our greatest adventure!!". 


I also came across some really cute clothespins at TJ Maxx and figured out a way to incorporate them as well with some paper doilies!


All of the linens were freebie fabric that I was given by a friend and the burlap runners were leftovers from our wedding decorations!  I don't save everything, but what I do I know I'll use again.

For the table decorations, I borrowed wood slices to set burlap wrapped cans, wine bottles wrapped in jute and old hinge topped Ball jars.


By the grace of God, I was able to track down peonies and force bloom them just in time for the shower!  The pops of pink and green from the store bought flowers coordinated nicely with the pink center in the peony!

 

Let's talk table service, shall we?  I decided early on that I wanted to use 'real' plates, so I hit up The Dollar Tree for plates and bowls for a $1.00 each.  Since the shower, we retired our existing plateware and are using these!  I pretty much dig 'em. 

 

When the new purple Ball Heritage Collection came out late this winter, I had already decided that I needed a pack.  You know, just because.  The shower gave me a perfect excuse to buy three boxes!  I tied some jute in a bow around the neck and popped in a paper straw.  Done!  And cute to boot.


To finish off the tables, I used Marisa's amazing recipes for Blueberry Butter and Orange Rhubarb Butter to give everyone as a favor for attending.  After scouring Pinterest high and low, I found the perfect printable to accessorize each little jar!


I {big puffy heart} love how it all turned out!  More importantly, Jennifer loved it too!!!

Ugly, Uglier, Ugliest

Every year for the last six years, Matt and I have hosted a Christmas party for some of our closest friends.  Costumes are highly encouraged as each year is a different theme! 

We've done:

Favorite Christmas Movie Character

Awesome 80s

This year we finally decided to have an Ugly Christmas Sweater theme!


I probably started looking for my sweater a little too late and wasn't really surprised when Goodwill had nothing on the shelves.  I resorted to making both mine and Matt's.  All thanks to a little hot glue!

This year in addition to the food, I also made a 'photo station' and came up with a hashtag specifically for the event that everyone could use on social media.  #reallyuglyRinglerChristmas 
Everyone seemed to really dig the light up frame and I got quite a few good pictures of everyone in their finery! 


I was highly impressed that so many people decide to dig up their Christmas spirit, embrace the ugly and get dressed up!! 


In addition to eating and drinking copious amounts of holiday food, we always play a cut throat game of CatchPhrase and MarioKart on the Wii.  As you can imagine, the house gets really, REALLY loud during all the games!  


Our party always seems to put me in the Christmas spirit and I look forward to getting together with our pals each year.

Ending 2014 on a High Note

Who else out there thinks December comes and goes in the blink of an eye? 

It's always such a flurry of activity!  Christmas parties.  Holiday baking.  Decorating... I cheated and jumped the gun wiht this one.  Shopping.  Wrapping.  So many things! 

Here are just a few things I'm looking forward to this month...

1.  In 5 short sleeps, we will be headed out to Las Vegas for the National Finals Rodeo!  So many things to look forward to all rolled into one: yummy food, possible meet-ups with blogging pals and  I couldn't forget...
2.  Cowboy Christmas.  Yes, it warrants it's own because the shopping is incredible!
3.  Heading home to listen to my mom sing in the annual Christmas cantata.
4.  Watching the mailbox with bated breath for all those gifts I ordered to arrive!
5.  Baking and decorating cookies with my pals from back home.
6.  Our annual Christmas party.  It's always themed and this year it's an Ugly Christmas Sweater Party!
7.  Opening Christmas cards.  It's a race at home to the mailbox!
8.  The epic 5 day weekend I get the week of Christmas.  Hoping to do a lot of crafting!
9.  Attempting to make new Christmas stockings so we all have matching ones.  Say a prayer for me!
10.  Getting our Christmas cards in the mail.  Here's a sneak peek of our adorable little family!

Wise Guy Cupcakes

Cupcake Decorating Tutorial

I adore these cupcakes!  They just make me smile.

They were the centerpiece for the graduation party I catered this weekend and everyone thought they were a hoot!  Pun totally intended.  Ha!  The school mascot is a 'Sage' or owl and I couldn't resist making these little guys!

And really, while they're a bit time consuming to put together, they're very easy to make.You'll start with 24 baked and cooled cupcakes.  I made mine Saturday morning and didn't get around to decorating them until Saturday afternoon.

The most tedious task is seperating all the chocolate sandwich cookies.  You'll need to carefully seperate 48 cookies, setting aside the cookie without the cream filling.  If you have trouble with the cream breaking, you can smush it back with your fingers.

Yes, smush is a technical term.

Cream Filled Sandwich Cookies

For the noses and eyes I used 24 orange chocolate candies and 48 brown chocolate candies.

Stop counting the candies!  I said STOP!!

To affix the eyes on the cream covered chocolate sandwich cookie, use a tiny dab of frosting.  You only need a little.  Too much and you'll see it spill out from underneath the candy.

After you get all the candies attached, you'll frost the cupcake and carefully place two of the cookies on top.

Then grab one of the orange candies and place it on it's side in the 'V' below the eyes.

Now use your knife or small offset spatula to pull the frosting above the eyes into the shape of little horns.  You can easily manipulate the frosting.  There's not a science to this, just go with it.

Wise Guy Cupcakes

Ingredients:
24 Chocolate cupakes, baked and cooled
Chocolate frosting.  I cheated and used canned.
48+ Cream-filled chocolate sandwich cookies.  Grab a few extras just in case!
48 Brown chocolate candies
24 Orange chocolate candies

Directions:
Carefully separate sandwich cookies, setting aside the wafer without the cream.
Use a small dab of frosting and affix the brown chocolate candies to the top of the cookie halves with the cream.  Set aside.
Frost cupcakes with chocolate frosting.
Place 'eyes' centered on each cupcake.
Take an orange candy and put just below the cookie eye.
Use an offset spatula and pull the frosting to make horns for your owl.

I Could Use Another Day

I don't know about you folks, but I would have been totally open to an extra day sandwiched between Saturday and Sunday!  All in favor of instituting mandatory three day weekends, raise your right hand.  Opposed... your vote doesn't count.

Friday afternoon I go off work and headed home to start prepping for the graduation party I was asked to cater.  But as I was pulling in the drive I did get sidetracked because my peonies FINALLY bloomed!

Okay, back to the task at hand. Food and decorations for the party. 

JC's Graduation Party

This is just the stuff that didn't have to go in the refrigerator.  I didn't get a pic of everything crammed in there, but it was chalk full too!

Friday night I made a double batch of my So So Good Chex Mix and finished up all the paper decorations for the party.  I also loaded up all the serving dishes, utensils and drink dispensers so I wouldn't have to do that Saturday. 

Saturday morning I was up bright and early to bake chocolate cupcakes, cut fruit and veggies, make dips and BLT bites.  Thankfully the family I was doing all this for have an extra fridge and I was able to run everything down Saturday afternoon and make room for what I had to prepare on Sunday!  I spent the rest of Saturday decorating the chocolate cupcakes!

JC's Graduation Party

After getting the cupcakes done, I was happy to relax with some wine (and food I didn't have to make) at a friends cookout!  Burgers and brats on the grill, pasta salad and a baby announcement to top off the evening! 

Sunday I was up and at 'em early again.  With Matt's help, I finished up meatballs, baked ham and cheese sandwiches and black bean and cilantro salsa.  After loading up the last of the food, I headed to Wilkin's for the party.  From this point, everything becomes a whirlwind of hanging decorations, icing beverages, displaying and refilling food and because I pulled it off, LOTS of smiling!
