Make This: Slow Cooker Quinoa White Chicken Chili

Vacation is officially over.

Gone is the warm and sunny climate of New Orleans, Louisiana. It's been replaced with 45 mph wind gusts and a blizzard warning here in good ol' Illinois.  Thankfully, I don't have to head into work today because of the weather conditions! 

If I had the necessary ingredients my Slow Cooker Quinoa White Chicken Chili would the perfect accompaniment to this day.... Alas. The recipe is posted over on my friend Ashley's blog Messy Kennedy for you to enjoy! 





Slow Cooker Quinoa White Chicken Chili

Ingredients
1 medium onion, diced
2 jalapeno peppers, diced*
3 garlic cloves, minced
1 ½ teaspoons cumin
4 cups chicken broth or chicken stock
1 cup salsa verde
1 pound boneless and skinless chicken breasts, thawed
2 small zucchinis, chopped
1 15 oz. can white beans
½ cup quinoa, rinsed
1 teaspoon oregano
½ a lime, juiced
2 tablespoons cilantro, chopped
Salt and pepper to taste

Directions
Place all the ingredients, except the lime and cilantro, into the pot of your slow cooker.  Cook on high for 3-4 hours.  Before serving, remove the chicken and shred it.  Return the chicken to the slow cooker along with the lime juice and cilantro. 
*I cleaned one pepper really well and left some of the seeds and ribs in the other for some spice!  

I’m lucky because Matt loves a good, hearty soup and this one is doesn’t require much else to go along with it since it’s loaded with veggies, beans and quinoa.  It really is easy to throw together in the slow cooker and go on about your business.  It’s a perfect, set it and forget it meal!

Make This: Pumpkin Protein Bites


During the fall, my work calendar is full of classroom presentations about pumpkins.  The best part of scheduling pumpkin presentations is making Pumpkin Patch Pie with the kids!  I find it funny to hear the chorus of "Ewws!" before they actually get to eat their snack, because almost every kiddo is asking for seconds when we're done!


Fun Fact: Illinois farmers grow more pumpkins than anyone else in the world!  

While I do enjoy Pumpkin Patch Pie, I was inspired by With Salt and Wit's recipe to make something a little more healthy.  These tasty nuggets of awesomeness are great for a mid-morning snack and also curb any cravings for sweets after supper! 


Pumpkin Protein Bites
Adapted from With Salt and Wit
Makes 18

Ingredients:
1/4 cup cashews
1/2 cup old fashioned oats
1/4 cup canned pumpkin
3 tablespoons maple syrup
1/2 cup Smucker's Reduced Fat Natural Creamy peanut butter or your preferred PB
1 package Advocare Vanilla MRS or approximately 60 grams of vanilla protein powder
2 tablespoons ground flax seeds
1 tablespoon chia seeds
2 teaspoon pumpkin pie spice

Directions:
1.  Combine cashews and oats in a food processor or blender until they are a fine powder.
2.  Mix the pumpkin, maple syrup and peanut butter in a medium bowl until combined.
3.  Add the cashew/oat flour, MRS, ground flax seeds, chia seeds and pumpkin pie spice to the pumpkin mixture.  Stir with spoon to combine.  Note: You may need to get in there with your hands to really mix it well.
4.  Cover the bowl with plastic wrap and chill in the refrigerator for 30 minutes.
5.  Remove approximately one tablespoon of the 'dough' and form a bite sized ball between your palms.
6.  Eat those bad boys!

Store in the refrigerator for up to a week or freeze for later.

Get In My Belly. Recipes That Didn't Disappoint.

Hey folks!! 

So last time I gushed about all the handmade and personal touches that went into the baby shower that I hosted for my sister-in-law.  I still swoon over the pictures!  This post is dedicated to all the amazing recipes (and their creators) that were created. 

I'm telling you, do yourself a favor and find a reason (any reason) and make some or ALL of these!  You won't be sorry.


With the shower being at 2pm, I knew that I wanted to make some lighter snacky options that were both savory and sweet.  I scoured Pinterest and started pinning away.  The menu was narrowed down to three savory options, fresh fruit and dip and 2 desserts.  Along with the food, guests could choose between iced tea or punch. 

The savory dishes included:


Corn Muffin Thumbprints.  I followed Cristen's recipe to the letter and opted to top these thumbprints with Matt's homemade strawberry jam that he cans every year.  These little gals were delicious!  The honey butter and little bits of corn, woo! 


Fresh Fruit and Orange Creamsicle Dip.  Deliciousness abounds!  I'm a BIG lover of all things creamsicle and this was spot on.  For this recipe I did substitute fresh OJ for concentrate.  

The two other recipes... Blogger Fail.  No pictures.  Alas.  You'll just have to trust me and make them without the pictures.  I'm a trustworthy gal, promise.

This Pickle Wrap Dip tastes JUST LIKE those old school, painstakingly created Pickle Wraps.  My mom is a champion Pickle Wrap maker and finding a shortcut recipe was right up my alley!  I've made this dip several times and always add a splash or two of pickle juice just before stirring.  Extra pickle flavor never hurt nobody!  

At each table setting, I set a small paper cup of this Snack Mix.  I added garlic powder in lieu of the infused olive oil and also added some chili powder.  Initially, I was a little worried this might be more spicy than most of the group could take, but they all ponied up and loved it!

On to the desserts.  Oh, the desserts!


Salted Caramel Chocolate Cake and Mini Apple Tarts, oh my!  They were as delicious as they look.  The cake was epic!  Seriously.  I'm a sucker for the salted caramel phase that's going around and it paired great with vanilla ice cream.  I did end up doubling the chocolate frosting recipe.  Because well, it's frosting!  

The Mini Apple Tarts were a variation of this recipe.  I opted to use store bought pie crust and went with apple filling because I'd canned some last fall... that was delicious!  Is there any interest in having my write up all my adaptations and post this recipe?  Lemme know!

To wash down all these tasty treats, I served good ol' Lipton raspberry ice tea and punch

 
The punch was super-duper good, but I didn't follow the recipe to the letter.  Based on several of the reviews I decided to use raspberry sherbert instead of strawberry ice cream.  And I did float some limes and lemons!  It tasted great and obviously the color was spot on too!

Five on Friday

It's been more than a hot minute since I've had the opportunity to participate in a Friday link up!  I've missed everyone!  So I'm carving out some time during my lunch hour, before I head into my next meeting...  Bring on the weekend!

ONE
All you sweet Southerners are cracking me up with winter woes!  This is our current temp, but it feels like -10.  Several local schools even cancelled this week due to the bitter cold.  I think the thermostat bottomed out somewhere close to zero, but with wind chills close to -30!!

TWO
Haddie, aka The Frog Dog, is earning her keep around the house thanks to this adorable face!  More to come next week, until then just look into those eyes...

THREE
I have literally ate this muffin every morning this week!  What she lacks in the looks department she makes up for in taste and satisfaction!

FOUR
These puppies showed up this week (a little late for this latest cold snap) and I'm in LOVE!  Me thinks they're going to get a LOT of use this season.  

FIVE
Excited for a bit of a low-key weekend!  Other than meeting up with friends for supper tonight and lunch with my family Sunday, there's nothing on my calendar... And I'm stoked.

Make This: Breakfast Mug Muffin

For a while now my breakfasts have been either a smoothie or an Advocare MRS, but winter decided to show up in Illinois this week and cold drinks just weren't cutting it!

Enter this muffin.

It's quick and easy to throw together and it really helps chase away the chill on a cold morning.  I enjoy the taste and texture, but I'm most impressed with the "staying power" it has!  Typically I'm a mid-morning snacker, but yesterday I was presenting at a conference and didn't get hungry 'til around 11:30am.  It's a stick to your ribs sort of muffin!

After pulling the mug from the microwave, I split the muffin open on a plate and add a schmear of sunflower butter which gets all melty and delicious!  I'd be willing to bet some Nutella would be a bangin'...

Ingredients:
3 tablespoons ground flax seed
1 egg, lightly beaten
1 tablespoon melted coconut oil
1/2 teaspoon baking powder
1/2 banana, mashed
Vanilla protein powder*
Splash of almond milk**
Non-stick spray, I use my Pampered Chef Kitchen Spritzer filled with olive oil.

Directions:
Combine all ingredients in a greased, microwave safe mug.  Cook on high for two minutes.  The muffin will puff in the microwave, don't be concerned. 

*The protein powder is optional, but I really like it in there!  Using the scoop provided in the powder, I fill it about halfway up.  It's just shy of 1/4 cup.
**Omit milk if not using protein powder.

Weekend Festivities // Live Music and Fall Fun

Another great weekend has come and gone.  *sigh*  Thankfully, we'll have another one coming around again, but first a whole week of work!

Instead of diving into work, I'd rather relive this weekend's shenanigans...

Friday night we did a little drinking, dancing and singing to Mr. Aaron Watson!  Good times, great music!  Keeping my fingers crossed that he will be playing in Vegas when we head out in December.

After sleeping in 'til 10:30am Saturday morning I was feeling extra energetic and a little guilty about all those Redd's from the night before, so I headed out for a 4 mile run.  I felt extra spiffy in my coordinating workout gear!

Matt and Bella headed to the farm to plant his deer food plot and I spent the rest of the afternoon in the kitchen whipping up some tasty yummies!  Broccoli salad, pumpkin chocolate chip cookies, bruschetta and apple crisp pie with salted caramel sauce.  The house smelled AMAZING!

After Matt got home and cleaned up we headed to Beitz's for supper and then we all headed off to hear some more live music!

Saturday night was Brushville, an up and coming country band who played at our wedding almost four years ago.  They've got two singles out on country radio, Bar Star and Baby's Got Her Boots On.  Check them out!  Here in central Illinois, they're a pretty big deal!

Since I slept like the dead Saturday morning, it was fitting that I was up bright and early Sunday.  But it was all for a good reason!  The first thing I did was prep a crock pot full of balsamic beef stew and then it was off to Apple 'N Pork Festival.

Shockingly, I only bought one thing and it wasn't even for me... but a Christmas present!  I know... Christmas already!?!?  After checking out all the vendors that this year's festival had to offer it was time to head back and consume copious amounts of beef stew and apple pie while watching football!  After watching the Bears lose to the Packers (I guess it's only disappointing if you're a Bears fan, which I'm not... Go Broncos!) I started the process, and it really is a process, of decorating the house for fall!

What can I say, I love Fall!  We were married in October, so I have lots and lots of decorations left over from the wedding that I use to decorate the house every year.  I overheard Matt say to Bella, "Holy Fall shitzel Bella!  Doesn't it feel like we're in a pumpkin patch?"

This week has been full throttle for me with getting ready for the big horse show this weekend.  My 'To Do' and 'To Pack' lists are finally starting to diminish, but I still have a lot to do to get both Louie and I ready.  Today's Five on Friday is the last five things I've pinned on Pinterest.

 Averie does it again!!  Don't these look epic?!?!   I would make a slight change and use almond butter, but that's just my preference.  I might have to whip these up to take with me to the horse show... I'd bet I have a bunch of new friends!

Five on Friday v.11

I'm so looking forward to driving home to see my parents and celebrate Easter with them in the church that I was baptized, confirmed and married in!  And I'm well prepared and won't be caught off guard when Pastor Joel says "He is Risen!" to our congregation..."He is Risen Indeed!"

TWO:
Confession: I have F O U R slow cookers.  Yes, four.  I have one mini, one standard, one that has three separate sized crocks and one programmable 6.5 quart.  And I don't just use them in the Fall and Winter either!!  Mine get just as much use in the Spring and Summer because it allows us to have supper ready to go when the weather is nice and we'd rather be outside enjoying it!  This week I made Slow Cooker Chicken Chile Verde and it was bangin'!!  Do yourself a favor and make her homemade tomatillo salsa verde, don't just buy a jar, it's that good!

 I have a bread starter in my refrigerator that I've kept alive for over two years.  Since cutting out most of the grain in my diet I don't do much more than feed it any more though. Once or twice a month I'll make a batch of cinnamon rolls, leave a few for Matt and then give the rest away.  While perusing Pinterest I did find this recipe and may let myself have just one...

What's your favorite Easter candy?  I eluded to mine in my post about what I hoped would be in my Easter Basket.  Reese's Eggs and Cadbury Mini Eggs!  I don't do the Cadbury Creme Eggs, but it's a good thing for my waistline that those Mini Eggs only come out once a year!!!

Homemade Apple Pie Larabar


I tasted my first Larabar years ago and thought they were delicious!  Mostly because of the price tag, I never really became a slave to the tasty little snack bar though.  When I first started following the Paleo lifestyle I noticed that several Paleo food bloggers had recipes to create their own... now we're talking!  Save money and get crafty in the kitchen?  Sign me up.

For a while, I was content just making the recipes that I had found on Pinterest.  Then one day Matt came home with a bag of dehydrated apples and I thought I could create an apple pie version of my own!  After a few trial runs, I'm finally satisfied with the final product!

To make these bars you'll need to gather almonds, walnuts, dates, raisins, dried apples, cinnamon, ginger and coconut oil.  I make these in the middle sized Ninja Master Prep Pro bowl, but any food processor should do the trick!


The first step to making these bars is to combine the raisins and dates into the food processor and puree them until they have broken down.  Once you think they've broken down enough, go a couple extra seconds!  This mixture should look like this...


Go ahead and add the apples at this point and break them up a bit too!

Add the almonds and walnuts to the container with the pureed fruit.  Now you'll want to sprinkle in the spices and give it a whirl to combine everything all together!  You'll want to scrape the sides of the food processor as needed.  At this point I stop the blender and melt some coconut oil in the microwave.  To get the ingredients to really come together I have the best luck drizzling the oil in as I have the blender running.  Once you're satisfied, you'll line an 8x8 pan with wax paper and empty the contents into the pan.


Then use your hands and press into the pan, creating a uniform thickness.


Stick the pan in the refrigerator and let the bars cool!  And now you wait.  After a few hours, I generally let them sit undisturbed for about two hours.  Once the bars have had a chance to cool, you can cut them into squares or rectangles.  I generally cut the large square into eighths, but you could do smaller or larger!  Tip: cut in the bars in the pan, rather than lifting the large square out first.  This makes them easier to cut!  I wrap each individual bar in plastic wrap and then store them in a resealable bag in the refrigerator until I'm ready for a snack.


And now I'm officially hungry!

So I make my own Larabars, do you make anything at home because you refuse to buy it at the store?  Let me know, I'm always up for trying something new!

Homemade Apple Pie Larabar
Yields: 8 bars

Ingredients:
1 cup dates, pitted
3 Tablespoons raisins
1 cup dehydrated apples
3/4 cup almonds, unsalted
3/4 cup walnuts
1/2 teaspoon cinnamon
1/4 teaspoon ginger
coconut oil

Directions:
Combine dates and raisins in food processor.  Puree until the dried fruits have broken down.  

Add dehydrated apples to the processor and pulse until all three fruits have combined.  You may need to use a spoon to scrape the sides of the bowl to help incorporate the fruits together. 

Now put the almonds, walnuts, and spices into the bowl of the food processor and blend until the nuts have broken down and combined with the fruits.  Scrape the sides of the bowl as needed.

Melt some coconut oil in the microwave and then drizzle the oil into the bowl with the motor running.  Once all the ingredients have been blended together pour the contents into a wax paper lined 8 x 8 pan and press into a flat, uniform thickness bar.

Cool in refrigerator for at least 2 hours.  Once cool, cut into eight bars and wrap individually in plastic wrap.

Store in refrigerator in a resealable bag.

Just Grillin' It

I've been out of town for the last 6 days putting on a horse expo and trade show and was exhausted when I got home yesterday.  Thankfully, Matt was game to take advantage of the gorgeous weather we had and opted to break out the charcoal grill for supper!

I pulled out a package of T-bones from the freezer, but was a bit stumped on what we'd have for sides.  Luckily, I found some romaine hearts in the fridge and had Matt buy some sweet potatoes at the store.  Supper, check!

Oh, and there was wine for me and Blue Moon for Matt!

The grilled romaine is so yummy and very easy to whip up that it really doesn't need a recipe, but this is the gist:

Grilled Romaine
Serves 2

Ingredients:
1 head of romaine, cut lengthwise down the center and washed
olive oil
garlic powder
salt
pepper

Directions:
Drizzle olive oil on all sides of the cut romaine.  Sprinkle with garlic powder, salt and pepper.  Place over indirect heat from your grill.  You'll want to rotate the romaine so you get it nice and wilted on all three sides (the cut side and the two rounded sides...think of it as a triangle), but it shouldn't take more than 2-3 minutes per side.

Feeling SPARK-y?

For a few months now I've been hearing and reading a lot about Advocare from other bloggers and a few friends of mine.  Are you familiar with Advocare? 

According to their website, Advocare is a premier health and wellness company offering world-class energy, weight-loss, nutrition, and sports performance products along with a rewarding business opportunity.

They offer a variety of products, but I find their Spark product the most intriguing!  Who couldn't use an extra energy boost?!?  It is also said to enhance mental focus, help fight occasional drowsiness, provide 20+ vitamins, minerals and nutrients and is sugar-free and only 45 calories!  You can read more about Spark here.


After going Paleo and completing a Whole30 challenge, I think I'm pretty well off in the diet and nutrition arena.  I'm also one of those people who for whatever reason is just a morning person.  It doesn't take much to get me up and going each day, but I really wanted to just give it a try and see if the hype was real....

Enter a Facebook giveaway from one of my friends who is a distributor.  She was going to give away a packet to the first five people who sent her a private message requesting a sample.  I was lucky number five!!

After the Spark arrived in the mail, I waited a few days to give it a try.  If it was that wonderfully magical I didn't want to just use it on some random day!   

I know, I'm weird.  

When I finally decided there was a day fitting of giving it a try, I whipped up a smoothie (keep scrolling for the recipe) that incorporated my Spark.  I had no idea what to expect flavor wise, but I was pleasantly surprised by the tart and sour zing, which I could only attribute to the Spark.  About twenty minutes after drinking my smoothie, I could definitely tell there was an extra something going on... 

I felt brighter eyed, the world was clearer and I noticed a little extra 'umph'!  It was all subtle though, which I appreciated.  I didn't want to be a wide-eyed, anxious ball of nerves!  The smoothie was also filling enough that it carried me through until lunch time.  Double bonus.

So, the question is: Would I actually pay for Spark?  Yes.  Although I don't think it's something that I need to incorporate into my daily routine, I did like that extra 'something' that it added to my day.  I'm not a slave to coffee, nor do I have kids to wrangle in the mornings, but I could definitely see myself drinking it prior to horse shows this summer!

Mango-Strawberry Spark Smootie
Serves 1

Ingredients:
5 frozen strawberries
1 frozen banana, previously peeled and sliced
1 clementine, peeled
1 handful of fresh spinach
1 packet Mango-Strawberry Spark
6 oz. water

Directions:
Combine all of the ingredients and pulse until smooth. Scrape down the sides of blender as needed.

Recipe Review

On Sunday morning the hubs and I were up and at 'em pretty early.

I was up even before my alarm was set to go off at 7:30am.  I was headed out for a day of 'junkin' with the girls at the 3rd Sunday Market in Bloomington.

Since both of us were going to be busy all day I decided to try the Southwestern Steak and Cornbread Dressing from Eat at Home.  I found this recipe on Pinterest and I'm so glad I did!  You should definitely try it, it's really really good!

As Matt was busy preparing to make pizza sauce with the fresh tomatoes from our garden and I threw the FOUR ingredients in the slow cooker for supper.

Yep, four.

The only change I had to make was, instead of sirloin tip or round steak, I used an arm roast because that was what what I had in the freezer.  Any cut of meat that is used for slow roasting would be perfect in this recipe.

I got home that afternoon, unloaded my goodies, and had to have a sample of the deliciousness!  And oh boy was it awesome!

Marshmallow Rolls...Yum!

Last week I read online where someone had an 'official' appreciation week for their significant other and I decided that this week, starting Sunday would be 'Matt Appreciation Week'.  When I brought this up to Matt one night last week you should have seen the glimmer in his eye when I told him about my plan.  I asked him to pick several recipes that he would want made and the first thing out of his mouth was "Marshmallow Rolls!"

Marshmallow Rolls were a special treat that Matt's mom made for him when he was growing up and he loves them so much!  When we were first dating Matt would make these for us on lazy Saturday mornings, but I've pretty much taken over the creation of these delicious rolls now.  Although it was a bit intimidating to be the girlfriend/fiance'/wife making Matt's mom's recipe!  There were times there when I just told Matt he should make them, but he would give me the big puppy dog eyes and say, "But you do such a great job..."  And I would cave in!  Do you make recipes that once belonged to your in-laws or do you stay at a safe distance from them?

These rolls are pretty freakin' delicious, but not the least bit healthy, especially if like Matt... you eat the whole pan by yourself!

Marshmallow Rolls

Ingredients
2 T butter, melted
8 marshmallows
1 tube crescent rolls
1 1/2 t Cinnamon
1/4 c Sugar

Melt butter in microwave.  You can use more butter if you're so inclined, but this is the minimum amount I've ever gotten away with without having to melt more butter to finish the recipe.  Roll the marshmallow in a dish of melted butter.
Combine cinnamon and sugar in a bowl and roll the marshmallow in the C-S mixture.
Unwrap and separate crescent rolls.  Place marshmallow on crescent roll and wrap up.
Roll the ball of dough in the melted butter.
Place in muffin tin.
Bake in preheated 350 degree oven for 8-10 minutes.  Allow to cool slightly and serve warm!  Enjoy!

Note:  I made this pan of rolls and then ate a banana and went for a 5 mile run.  I only ate one when I got home... it was the last one left!

These rolls are easy to make and delicious too!  I always put up a fuss about making them, but they are always a hit with Matt, as well as house guests.  Try them this weekend for Mother's Day!
